2.5 kg of powder
1 liter of water
200 ml white wine
1 clove garlic, minced
Pepper (to taste)
100 g pepper young finger
50 ml of lemon juice
Salt (to taste)
200 ml of olive oil
660 g of shoot mix
60 g of pequi
50ml of lemon juice
100 ml of coconut oil
25 g of mustard
25 ml vegetable stock
Method of preparation
Cook 2.5 kg of octopus in 1 liter of water with 200 ml of white wine, 1 chopped onion, 1 clove garlic, chopped 1 leek and salt and pepper to taste for about 50 minutes. Then give a heat shock with ice.
Cut 2.5 kg of cleaned squid into thin slices, add 100 g of young peppercorns into cubes, 50 ml of lemon juice, salt and black pepper to taste. In a preheated frying pan, place 200 ml of olive oil and sauté the squid with 100 g of coriander, 600 g of sprout mix and 1 chopped leek for a few minutes. Reserve.
Mix 60 g of pequi, 50 ml of lemon juice, 100 ml of coconut oil, 25 g of mustard, 25 ml of vegetable stock and salt and pepper to taste. Process them until a homogeneous mixture is obtained.
